My nextdoor neighbour has a beautiful plum tree in her back garden and lucky for me she brought round a bag of freshly picked plums at the weekend. This classic cake recipe I’ve been wanting to try for some time now and I’m happy to say it was very easy to make.
The girls love it after school with a glass of milk or juice and dad has a bit whilst he’s watching the tv in the evening too.
In fact the day I baked it (9th Sept) dad came home with a box of chocolates to celebrate our first 6 months as a married couple, lucky I had the cake made eh?
Plum and almond cake
225g butter, softened
175g caster sugar
3 large eggs lightly beaten
1 tsp of vanilla paste (or essence)
300g plain flour
2 tsp baking powder
50g ground almonds
150 ml natural yogurt
10 – 12 plums, stoned and quartered
3 tbsp flaked almonds
24 cm tin, greased and lined with baking paper
- Heat the oven to 170C, 150C fan gas mark 3
- Mix the butter and sugar together until pale and creamy in a large bowl.
- Mix in gradually the beaten eggs and the vanilla essence
- In a separate bowl, sift together the flour and baking powder. Add the flour, ground almonds and yogurt to the butter and sugar mix and fold until smooth.
- Place in the prepared tin and level the surface. Scatter the plums on top and sprinkle the almonds on top
- Bake in the pre-heated oven for 1 hour or until cooked (test with a skewer in the middle – if it comes out wet with mixture on put back in the oven for 10 minutes and re-check)
